The Waldorf Astoria Chicago announced today that Herve Cuyeu will lead the culinary team as Executive Chef. Cuyeu, a native of Bordeaux, France, will oversee all conceptualization and creation of cuisine at Balsan, the hotel’s casually elegant bistro and at the sophisticated, yet cozy, Bernard’s Bar. In addition, Chef Cuyeu will also lead the culinary charge on the Waldorf Astoria Chicago’s catering operations for social events and business functions, in-room dining and spa cuisine at the Elysian Spa & Health Club.
