PARK CITY, Utah - Waldorf Astoria Park City and the Talisker Restaurant Collection today announced the opening of Slopes by Talisker, a new restaurant concept developed and led by John Murcko, Vice President of Culinary Services, and executed by Clemant Gelas, Executive Chef. Slopes by Talisker embraces the "living well" mantra with a menu that focuses on freshness, nutrition and balance.

"Whether it's enjoying our beautiful mountain setting or a wide range of artistic and cultural activities, Park City is all about living well," said Murcko. "Slopes by Talisker celebrates the best of Park City with healthy and hearty dishes that use quality local ingredients and provide memorable dining experiences for our guests."

As a complement to the hotel's Waldorf Astoria Spa, Slopes by Talisker emphasizes locally sourced, seasonal ingredients with special attention to the dietary needs and preferences of today's guests, including gluten-free, non-dairy and vegan choices. Diners will experience the high level of service that is a hallmark of the Talisker Restaurant Collection, which includes Talisker on Main and The Farm. A casual menu is offered in the lounge while a more extensive menu can be found in the dining room. Slopes by Talisker also features an extensive wine program created by Talisker's Director of Wine & Spirits Sean Marron. Breakfast, lunch and dinner will be served including these highlights:

  • Tuna Paillard with shaved butternut squash salad, pine nuts and habanero garlic vinaigrette
  • Beef & Herb Salad with lime, mint, hot chiles and cucumber
  • Kale & Potato Soup with Yukon gold baked chips and crispy prosciutto
  • Lobster Carpaccio with fennel confit, blood oranges and fennel pollen

Mains ($26 - $42)

  • Arctic Char with artichoke mash, oil-cured black olives and lemon
  • Berkshire Pork Chop with ratatouille, mustard spatzle and dried cranberries
  • Fricassee of Chicken with foraged mushrooms and sweet potato gnocchi
  • Pistachio Venison with elderberries, smoked cauliflower and pistachio emulsion

As Vice President of Culinary Services and Executive Chef for Canyons Resort and Talisker, Murcko's focus is to provide extraordinary dining experiences with delectable cuisine made from scratch. Murcko began his exemplary cooking career in a resort community at age 14 and went on to graduate from the prestigious Culinary Institute of America in Hyde Park, N.Y. Born and raised in Boege, France, Gelas brings an international flair to Slopes by Talisker from his experience working at La Maison de Marc Veyrat, which serves upscale mountain cuisine in the French Alps; and at L'Oxlays, a Michelin-starred, fine-dining restaurant located in the mountains of Val Thorens in Savoy, France. He expresses his passion for cooking through local ingredients that he infuses with the culinary traditions of his home country.
